• Summer Ravioli

    Summer is not quite over- there is plenty of time to enjoy fresh tomatoes in many varieties. Did you know that tomatoes are rich in antioxidants such as lycopene? This antioxidant has been linked to bone health. Other health benefits of tomatoes include heart health as tomatoes have been shown to lower cholesterol, LDL levels and triglycerides.

     

    1 pound whole wheat ravioli- prepare according to package directions.

    1 can anchovies in olive oil

    3 ripe beefsteak tomatoes- cut into chunks

    1 sweet onion- diced

    handful fresh basil

    2 cloves garlic

    3 tablespoons extra virgin olive oil

    grated parmesean cheese

    In large saute pan, add 2 tablespoons olive oil and crushed garlic. Saute 3 minutes. Add onion and anchovies and saute until softened. Add tomatoes and basil. Cover with lid and simmer 30 minutes, stirring often. Add ravioli and top with cheese.
