Enjoy this delicious tomato pasta salad with your favorite variety ! This recipe is wonderful served room temperature or even hot as a main dish !
1 pound penne pasta- I like to use a whole grain pasta to increase fiber !
2 pounds ripe tomatoes- cut into small pieces
8 ounces fresh buffalo mozzarella- drained and cut into small pieces
1/2 cup fresh basil- chopped
1/4 cup fresh parsley – chopped
zest of 1 lemon
kosher salt and pepper to taste
Cook pasta according to package directions and drain. In a bowl, add all ingredients except the pasta. let sit at room temperature approximately one hour. Add pasta and mix. Enjoy!
