    Bean Cakes

    Ingredients:

    • 3 cups canned cannellini beans, rinsed and drained well
    • 3 eggs, beaten
    • ¼ cup whole wheat flour
    • 3 tablespoons extra virgin olive oil
    • ¾ cup greek style plain yogurt, low fat
    • 1 teaspoon cayenne pepper

    Preparation:

    Heat oven to 300 degrees. Mash the beans with an egg beater or put in food processor. Add the eggs and blend well. Mix in flour and seasonings. Heat the oil in a heavy skillet. Make bean patties and brown on both sides. Transfer to hot oven and bake until desired doneness, about 20- 25 minutes. Top with dollop of greek yogurt.
