    Mushroom and Radish Salad


    • 4 ounces white mushrooms, wiped clean
    • 8 radishes
    • 1 cup arugula
    • 1 garlic clove, smashed
    • 4 tablespoons extra virgin olive oil
    • Juice of 1 lemon
    • Lemon zest
    • Parmesan cheese, to shave on top
    • Salt and pepper to taste


    In a small wooden bowl, put the garlic, some salt, lemon juice and zest and mash to a paste. Whisk in olive oil. Thinly slice mushrooms and radishes and place in bowl of dressing mixture. Add lettuce leaves and toss. Use your zester to grate cheese. Add salt and pepper to taste.
