• Elegant Eggplant

    Eggplant contains a phytonutrient called nasium , which has been shown to have a protective effect on the fats which make up brain cell membranes

    • 1 large or 2 small eggplants, cut into slices approximately ½ inch thick.Cut the disk into 4 quarters
    • ½ cup low fat mozzarella cheese, shredded
    • 2 tablespoons extra virgin olive oil
    • Kosher salt and pepper

    Preheat oven to 350. Using a large, heavy skillet, heat olive oil until it shines. Add eggplant but do not let pieces overlap. Season well with salt and pepper. Cook until nicely browned on both sides. Carefully remove eggplant from skillet and place on paper towels.

    Add the above recipe for Summer Sauce to the skillet. Add eggplant and top with cheese. Place skillet in oven and bake 45 minutes.
