• Summer Sauce

    I love summer! And I love tomatoes…especially juicy beef steaks grown in New Jersey. Tomatoes are an excellent source of lycopene, which is a carotenoid  pigment. That is why tomatoes are so rich in color. Tomatoes are also high in antioxidants and may play an important role in bone health. I hope you enjoy this fresh and simple tomato sauce recipe!

    Summer Sauce

    • 4 ounces fresh buffalo mozzarella, torn into pieces
    • 3 large beef steak tomatoes, coarsely chopped ( you can use any variety you like)
    • 1 small sweet onion, chopped
    • 2 cloves garlic, chopped
    • ¼ cup dry red wine
    • 2 tablespoons extra virgin olive oil
    • 3 tablespoons each of basil, oregano and parsley, torn into pieces ( can used dried if fresh not on hand)
    • Kosher salt and pepper
    • 1 box whole grain angel hair pasta, cooked according to package directions

    In a skillet, heat olive oil. When oil begins to shine, add onions. Cook until soft. Add chopped tomatoes and season well with salt and pepper.  Add red wine and herbs. Cover and bring to a simmer approximately 1 hour or until ready to serve.

    Toss cooked pasta and mozzarella with sauce. Enjoy!
