Strawberries are loaded in antioxidants and phytonutrients including anthocyanins and flavonols. Also to be high in fiber, strwberries have also been linked to better blood sugar control and have an anti- inflammatory response in the body.
This is a wonderful, versatile recipe for 4th of July Strawberry Salsa created by my dear cousin Amy.
2 kiwi
2 golden delicious apples
16 oz container fresh strawberries
Small container fresh raspberries
1 tbsp brown sugar
2 tbsp sugar
2 tbsp strawberry preserves
Chop all fruit into small pieces (use food processor rather than a knife)
Mix in sugar, brown sugar and preserve
Refrigerate until ready to use
This salsa is a wonderful, festive dessert when served with cinammon pita chips such as Stacey’s or fresh fruit. It also tastes so good on frozen yogurt or pound cake and whole grain pancakes! Freeze it for a sorbet like texture.
