Step 1- Bring turkey carcass, legs, wings, and 1/2 cup each chopped carrots, celery, onion, fresh parsley and dill to a boil in a large pt. Allow to simmer 2 hours.
Step 2- Once cooled, drain broth with a colander and add the broth back into the pot. Add more chopped carrots, celery, onions, dill and parsley, as well as leftover turkey meat, stuffing and gravy. bring to a boil, then allow to simmer 30 minutes.
