March is National Nutrition Month®, a yearly event which calls attention to the importance of making informed food choices and developing sound eating and physical activity habits.
The theme this year is “Eat Right, Your Way, Every Day,” which encourages personalized healthy eating styles and recognizes that food preferences, lifestyle, cultural and ethnic traditions and health concerns all impact individual food choices.
For this National Nutrition Month, I would like to share some hints on making grains and starches even healthier.
I like to ” tweak” several grains and starches. For instance, I will add a cup of drained and rinsed canned beans to cooked rice, quinoa or pasta. This little trick will instantly boost fiber and protein intake. Want to increase your calcium intake? Add a half cup of non- fat or low fat cheese as well. Feel you want to consume more antioxidants ? Add some raw spinach, kale or shredded carrots. Dried cranberries or blueberries work well too.
