    For a heart healthy diet, it is recommended that 2 servings of fish are consumed weekly. With this easy and tasty recipe, you will want to eat fish all the more ! This recipe not only works well with flounder, but just about any fish you can think of !

    4- 6 ounce flounder fillets ( skin taken off)
    2 tablespoons extra virgin, cold- pressed olive oil
    1 tablespoon capers
    1 tablespoon fresh lemon zest
    kosher salt and pepper

    Preheat broiler to 400 degrees
    With a paper towel, rub some olive oil on the bottom of a cookie sheet or glass casserole pan. Arrange fillets. Drizzle with olive oil. Season with salt, pepper, lemon zest and capers. Broil 4- 6 minutes until coked through and flaky.
