2 cups peeled squash, cut into 1 inch cubes
2 cups peeled, cubed turnips
2 cups sweet onions, chopped
2 cups baby carrots
2 cups peeled, cubed rutabaga
2 TB olive oil
¼ tsp fresh ground pepper, kosher salt, rosemary
Preheat oven to 400 degrees. In a large bowl combine all the ingredients. Divide the vegetables between 2 large baking sheets and spread them out in a single layer. Roast for 45- 60 minutes, turning them occasionally until lightly browned.
